Microwave Vegetable Pulao

Ingredients Method
250 g basmati rice
400 g mixed frozen vegetables
handful of raisins
1 vegetable stock cube
1 1/2 tsp curry paste
handful cashew nuts
600 ml boiling water
  1. Place rice, vegetables, and raisins into a large microwavable bowl. Pour boiling water over top.
  2. Crumble in the stock cube and add curry paste. Stir to combine. Cover and microwave* on full-power for 12 minutes.
  3. Stir, then recover and allow to stand for 2 minutes. Continue cooking for 5 minutes.
  4. Fluff rice. Add cashew nuts to the surface and serve.
